Have found a solution to the problem. We are also using the plugin WP Responsive Menu. This has an option to enable swipe on mobiles. Have disabled this and selecting text is now working. Not sure which plugin is at fault, but we can live without swipe for the menus,

Thanks – that has solved my problem – I am now saving using MAC Numbers which allows me to set the encoding to UTF-8.
