My solution was not really a solution but a workaround. The <b></b> tags are still littered all over the shop pages, and I haven’t figured out how to get rid of them…
AND, this only on the Hestia theme.
But my workaround is something I stumbled upon. If I fill the product “short description” with text, then the column issue CAN resolve. IOW, it depends on how many characters of text I have in the short description (see screenshot here).
Ultimately, to truly fix this problem, I need to figure out why Hestia (and only Hestia) is adding bold tags to every line on the Woocommerce shop page.

Ok, I just confirmed that it is definitely Hestia, because when I switch to a different theme the problem goes away. It is only in Hestia that this issue occurs (see screenshot here of it working on another theme).

Maybe this is a problem with Woocommerce and not Hestia? The bold tags are inserted on the Woocommerce front end, so maybe I can check with their support to find a resolution to this.

Yes the problem is not showing now, because I changed sorting from “Latest” to a different sorting that does not cause the problem. But when I switch back to Latest sorting, then the problem appears again.Wow, so its <b><b/> tags that are causing the problem? Where did they come from? After looking into this further, it appears as if <b> tags are being inserted on every single line! (see screenshot here):
I removed all the plugins, and also removed the child theme as well, and the problem still persists (see screenshot here). So I know it is not an issue with any plugins or my child theme. So I’m not entirely clear what else could be adding the <b>/</b> tags. Any ideas?

I installed the Health Check plugin, and the columns work as expected when I enable all my plugins–which means none of my plugins are causing this issue.I did some testing and narrowed the issue down to the Hestia theme. This is definitely a bug in Hestia. If I switch to a different theme, the problem goes away. But when I switch to Hestia parent (I am using a child theme), then the problem appears again. There is no doubt that the original Hestia theme (which is updated by the way) is causing this problem. But note, to replicate this problem, you must enter a full paragraph of text into the product description.
Here is a screenshot of the default Hestia theme. As you can see, only 2 columns appear!
