Found it myself…
The php code is in ultimate-member/includes/core/um-actions-profile.php.
New option can be inserted in the $items array in line 1076 where as we can see there are already options (Edit Profile, My Account, Logout, Cancel).
This is a really wonderful plugin.
Thank you for your detailed and correct answer. The theme width was the problem.
