Tried switching themes and troubleshooting plugins some more but nothing seems to be causing the issue.
I decided to try a previous version of Relevanssi (3.3.7.1) and it does works. Perhaps there is a conflicting change in the newer Relevanssi version with Storefront? I’ll look over changelog and see which version is best for the time being and if I can narrow down what is causing this issue for me.
If you have any ideas I’d greatly appreciate them. 🙂

I believe the index is working correctly. All my products (720) are being indexed and a lot of terms are too.
Stats:
Documents in the index: 720
Terms in the index: 21713
Highest post ID indexed: 11285When I try and search for the 25 most common words in the index, for example: surgical, nothing appears in the search.
As for newly added plugins WP Super Cache was added but it currently off. I’ll look into it further.
Thoughts? Appreciate the help, thanks 🙂
