1) Perhaps you are getting confused? S&F Free has almost no UI (well, one screen) and all the work of creating a form is done with shortcodes which is covered in the docs:

2) This sounds like you are not creating your taxonomies correctly – how are you creating them?

S&F does not contain this text. The text is taken from teh taxonomy object for WordPress Category and WordPres Tags

So you will need to find out how to translate the built in WordPress Categories and tags in order to do this.
