We do have the option to view them in the columns as shown in this screenshot: https://prnt.sc/mncB0bAW3-aD
On click of the eye icon notes will be visible.
The reason for showing on a popup is that if the notes have bit more text then it will be difficult to view the orders list.
You can enable this option from WooCommerce > Settings > Customer Notes

These issues are arising due to conflicts with either the theme or some other plugins that modify the default Add to Cart behavior.

You seem to have set the default order status to Pending Payment when order is placed using Custom Payment: https://prnt.sc/SJFT9jFS-RNI
Request you to modify to On Hold so the Payer button does not appear on the Order Received page.

Custom Payment Gateways for WooCommerce is more of manual payment and does not have direct integration for your external payment gateway but we do have provisions to redirect to an external URL.
You can use the payment gateway description, instructions and the email instructions for users to process their payment.

We apologize for the delay in addressing the Pro version with Checkout blocks but it was again a challenge for us but we have now released an update to the Pro version that will allow Custom Payment Gateways to be available for Checkout Blocks.
We will now be having a roadmap as well to improve the plugin further and keep adding more features.

Due to security reasons we had to stop using the media library.
We can add a new menu in the backend for viewing images like there was previously but this will take some time and I will schedule for this development in the coming months.
