It seems like the problem stems from mixing different methods of adding photos and how your theme applies its styling.
The best way to go about it is to consistently use the Block Editor’s “Gallery block” whenever you want to display a row of 2–3 images. In the Gallery block settings on the right panel, you can select the number of columns, which determines how many photos will sit next to each other.
Try to steer clear of manually aligning images with HTML or mixing in Classic editor galleries, as the theme’s CSS often overrides those settings. That’s why your first attempt might work, but the later ones don’t. Before you hit publish, use the Preview button to see how the gallery will look on the live site.
