The issue was indeed caused by a plugin, where the custom cron schedule was not being founded by the system.

I have been able to update WooCommerce database, that resolve some issues I had (statistics tab is now functional). But all Cron events seem to be blocked (as you can see on the screenshot).

I also have fatal errors in the WooCommerce log since December 16 with the same error again and again :
