Hi @ehmarketing. A great way to narrow down what is causing the issue is to do conflict testing using this guide.

There isn’t a way built into WooCommerce to prevent the order from being created but if you set the Hold stock minutes in WooCommerce > Settings > Products > Inventory, the order will be cancelled once that time is up.

Hi @ehmarketing. I don’t think this is a Cron issue if you set up read Cron jobs on your site. I think it may be due to site caching. If there is any caching on the site/server, does deactivating it help?

I tried replicating this issue on my test site which is running WooCommerce 5.1.0 and could not. I changed the order status to Completed and then updated; there were no changes to the order total.
What kind of changes are you making to the order, and what is the payment gateway that you are using? Does using a different gateway like BACS make a difference?
