I have just made it work with Product Vendors and WC Bookings. The only problem is that vendors can only access their bookings in the wordpress backend. We might need to build our own frontend here. WC vendors potentially seems to offer more features, but their beta is still buggy.
Please let me know whether you tried EDD and how it went.

I am looking into this as well and the WC Vendors bookings integration seems to be the way to go, unless, of course, you want to work on a customized solution (which we are considering as well).
