Sorry, Rookie error!
I did not realize this was a “per product” hide option (which is really cool btw!).
So far it seems to work great. I’ll leave a good review.

Indeed.
The Mail Log shows emails dating back only to the day I installed to plugin, but no further.
My site is 18 months active with 30k orders. The log currently shows 347 emails.
