I am not using the Akismet plugin, since I still have to check every message myself – there is some legitimate questions there. But limiting the entry size, or truncating it, would help me a lot, since some spammer post huge entries.
It would surely be enough to see/safe first 1000 characters
Perhaps I can do it at the database side? Just want to be careful not to break things.

I checked with the WordPress forum – there is no Contact Us form there. They said it most likely comes with a theme, and I do have Storefront theme installed with Woocommerce.
Further digging lead me to believe that this form comes with the Jetpack plug-in (which is used by Storefront). So I’ll check with Jetpack.

I have not installed a specific plug-in, this Contact Us came with a stock WordPress installation and is used on a Contact Us page in the Woocommerce plugin. I use Storefront template.
On the Admin side I see these Contact Us postings under Feedback->Form responses.
If there are other way to identify the origin of the Contact Us form – please let me know what I can check.

I may be ok with having Users only. This allows my old customers to login. When and if they place and order they will become Customers.
Importing Orders from my old store would also populate WooCommerce Customers, but I think I do not need to invest in this work, since I can still use the old store for historical data

I re-imported customers again, this time with all the fields you specified (an also with shipping address files for good measure). I can see these fields when I look at Users in WordPress.
But still, nothing under WooCommerce. I used WebToffee plugin – it does not specifically say Users or Customers, just says User/Customer as Import type. Using their free version. I will probably experiment with other plugins.
