@jeih01 did you try to go through the ‘first-time configuration’? It worked for me several times in similar situations.
I had the same problem on a website that worked fine for years. Reinstalled WP and Yoast. Nothing.

Day 1 – Everything works fine.
Day 2 – I disable the cache for the products. No other changes.
Day 3 – I enable the cache for the products and I don’t make any change to the website. No new plugins, no updates. The cache doesn’t work on the product pages.Meanwhile I solved with another cache plugin.

I get a cache-control: max-age=0 but i suppose the effect is the same.
I checked another website on SG and it has the same cache-control: max-age=0 but the caching test is positive on the pages.
On the website with no cache I get x-proxy-cache: MISS.
On the website with the cache working I get x-proxy-cache: HIT.On both websites the products are not cached.
They have in common the theme and the following plugins:
– WooCommerce
– WooCommerce PayPal Checkout Gateway
– WooCommerce Stripe Gateway
– Yoast SEO
– Absolutely Glamorous Custom Admin

The websites has two languages and uses WPML. The variations can be updated only in the main language. If you then check the product (on the public site) using the secondary language you don’t see the update on the variations. Unless you purge the cache.
