I was able to resolve the cart problems by changing Settings>Permalinks from “Day and Name” to “Default”. Not the ideal fix I was looking for, but at least it’s functioning. Could someone perhaps provide some insight as to why the “Day and Name” permalink setting would break the cart? Still a mystery to me.
