Actually Google now removed the timestamp and it it displayed as expected without the timestamp. It seems like time was the deciding factor, so one just has to wait a few days I think.

Thank you for your detailed answer.
I understand the points and I also find them important and relevant, however, this is the home page (index page) of the website. It is not a blog post or anything like that, but actually the central page at https://example.com for instance. So I can’t understand why Google adds a timestamp in that case, especially since it doesn’t provide Structured Data, Sitemap Timestamp or a WordPress feed. If I search through the source code on the page, there is no timestamp or meta property saying “last updated” or similar.
If I understand correctly, there is nothing else I can do about it, right? I mean what options are left than having no timestamps in the code and disabling timestamp output in the sitemap, right? Or are there other options?
