Ah, I get it now, thanks Mark. When I go back into the Send Email action I see my email configured exactly the way I had done it. All good!

Hi all, in case anyone has this same question and also needs to do conditional 3rd-party/API integration I found a solution for this in Gravity forms, which has this functionality built-in:
