I received the same notice from GSC for a non-WordPress site.
Using Google’s Structured Data Testing Tool, I could not find any errors. However, GSC is still reporting an error.

I’ve been twiddling with the manage stock options site-wide, product-based and variation-based. Once in awhile, I’ll get it to say “In Stock”. However, if I click on the product and just click the Update button without making any changes, it goes back to “Out of stock”
