Alright, so, turns out there were multiple things wrong.

Emails not arriving to customers?
Solved it by finding a WP SMPT plugin for sending emails

Tickets not showing up?
Clicked a bunch of buttons in the Opentickets plugin → system status → tools

PDFs not generating?
Well, turns out that selecting and deselecting what image showed up solved that for me. could be that your image is too large for dompdf to handle
