I figured out how to remove the + – navigation. For those interested, just insert
.DOPBookingSystem_Navigation .add_btn, .DOPBookingSystem_Navigation .remove_btn { display: none; }
into the main CSS for your wordpress theme.
Still looking for the auto-select.
