I went on the IRC chan and managed to solve the issue.
Seems the cert files were not working.
Had to switch to an older version of them from your github.
In specifics it was v3.6.0 that works fine here:
https://github.com/stripe/stripe-php/archive/v3.6.0.zip

For whatever reason, the newest versions don’t seem to work and apparently there has been several people in the past few weeks with the same issues according to the people who pointed me to the fix.
