I am not a GitHub user so don’t know if there is a correspondence there. I notice that WooCommerce has just released a new version, but today I encounter the exact same problem again. I try to update a customer field on a WP user, and get the fatal error in WC.
If I deactivate WC there is no problem changing the value in the custom field, and then I reactivate WC without problems. So the problem seems to persist in WC.

I am using a Danish/Nordic payment gateway called Bambora. But the gateway is not integrated with WC, so I handle payments and WC status in 2 seperate workstreams.
Also, the most recent example was an order only containing free products. The invoiced amount is therefore 0! (Maybe this is part of the root cause?)
I manually set the status of the order to “Completed” a few days ago, and last night WC changed the status back to “Processing”.
As far as I can track the logs (looking directly in the database), the action triggering the change in status was “wc-admin_import_orders”.
