After multiple hours of searching for an answer, embarrassingly, after posting this support request I was able to solve the issue.
It came down to the column settings. I installed the plugin on a different site and noticed I wasn’t getting the same issue. I had the image column included which is not supported in the free version of this plugin.
Because the column can’t be rendered this somehow messes up the ability to sort the table correctly.
Thank you anyway, and hopefully this might help someone with a similar issue in the future.
