Well hot diggedy dig! I just continued reading this Codex page:

and I’d missed that I needed to add this to my page template (I’d copied the Water Lily page.php template into my child theme):

*/
I’ve done this, overwritten the old version et voilà, I can now assign page templates.
This makes for one happy bunny 🙂
