I am using WP 5.3.2 with DG 4.4.3 and can create, add/remove files or replace galleries. Always need to activate classic editor while working with DG and deactivating to see things correctly. The DG code should be placed in
1) a classic block surrounded by <p>-</p> tags
2) a paragraph block surrounded by []
3) a shortcode block with the same format as choice 1 or 2 above
Don’t give up because you can get it to work with WP 5.3
Latest versions of Gutenberg and Classic loaded. Nice that the classic block and add media work well. Only minor drawback when editing is the absence of thumbnails and text before clicking on the modify icon.

Using WP 5.0.2 and Classic Editor Plugin. When DG is used in a document just choose Classic Editor for the DG bit. Rest of the work done in Block Editor. No real problem with DG with this work around.
