Hello,
Did some additional tests.When I canceled the order manually in Pending Payment, the stock did not recover.
This suggests me that the normal WooCommerce status transition doesn’t work from Pending payment -> Cancelled correctly. (I will do the test flow you suggested)

Thank you for your reply.
By doing too much, I meant that it should not setup every transporting modes without any questions or explicit permission. (Especially because the plugin can’t know my pricing policy, so the admin still has to setup the prices.)
Checked the readme.md on the SVN, but it doesn’t mention that the plugin will add new shipping methods after activation. Is this intentional at all? I will install the plugin today on my test system, maybe I am the one who did something wrong. Or some incompatibility with one of my other plugins.
