OK so I figured it out. Basically the Stripe for WooCommerce plugin is not the one to use for connecting WooCommerce and Stripe.
Woocommerce has one you can “buy” for free here:https://www.woothemes.com/products/stripe/
So I uninistalled the Stripe for WooCommerce plugin and installed the “Stripe” addon from WooCommerce. Works fine now.
Also note: I contacted Stripe and they do not get any data via the API so this error is native and local to Woocommerce or the Strip addon.
