Thanks Harish, editing the Media settings and un-checking crop worked for me.
A note for others with this issue:
Wordpress will still reference the cropped version of the image as the system has already done this for you.
To see an updated thumbnail in the correct size, you will need to set the featured image on your related blog article AGAIN.
Following Harish’s steps to set my own thumbnail size and then setting the featured image again fixed my issues.
