I have just released a new version 1.0.1, where you can set custom default avatars 🙂
Unfortunately, in the current version you can only choose between the two predefined avatars. But I am aware that this is not optimal. With the next update, I will add an option for custom avatars.

sorry for late reply. You can force Local Avatars for non-users in Admin Panel -> Settings -> Local Avatars -> Redirect all Gravatar requests to local avatars (choose default avatar below)
