Thank you for staying in touch. Okay, I see the issue. It is very likely something included in the theme’s update is causing a critical/fatal error when performing the add to cart action and CheckoutWC is active in the site.
I see you have enabled the WP DEBUG mode and display errors, however the front end error display is not giving a lot of information.
Can you please send me the full debug.log file to [email protected]?
Thank you for contacting us and reporting this issue. The behavior you are experiencing is a bug. The remove item button is a feature only of CheckoutWC Pro, not CheckoutWC Lite.

To add a checkbox for privacy policy acceptance, please go to WooCommerce > Settings > Advanced and under Page Setup, select a page in the Terms and conditions option:
Remember to scroll down to the bottom of the page and click the blue Save Changes button.
The checkbox will start appearing immediately after the page has been assigned to the Terms and conditions option.

The Phone field validation in CheckoutWC Lite is a basic validation checking if the field is empty or not empty. This is the reason why the behavior you are experiencing is expected.
Yet, with a JavaScript snippet like this you can set the minlength attribute of the shipping_phone field to a value of 11.
Alternatively, in the pro version of CheckoutWC, there is a feature called International Phone Field which extends the regular Phone field with more advanced features and validation. You can remove the “company name” field through the WooCommerce settings.
If you are using the WooCommerce checkout blocks, please locate the page that is assigned as Checkout Page in Pages > All Pages on your WordPress admin, click to edit the page, then inside the Gutenberg editor, in the checkout block, click the Shipping fields area.
