This first link is my personal site-concept. It has both the logo ánd title (with default hyperlinks to home):

Obviously, I can’t display both the (interactive) logo and title there, as that is my issue.
(the logo currently displayed is simply pasted into the header image)

I’m not sure what happened with my client’s site, but I ám sure that my personal site had this functionality out of the box. I’m fairly certain the other one initially worked like this as well (though there is a small chance I am misremembering) It simply seems to have been ‘corrupted’ somehow.

Personally, I tend to think the WordPress customiser interface is somehow corrupted, by a specific combination of actions. For example: having the title-box ticked, uploading a logo, unticking the title-box and then deleting the logo. Some unforeseen chain of actions, messing up the interface’s functions.
That’s speculation however. My knowledge on the subject is too limited.
