I can confirm this doesn’t work for me as well, I have Amazon SES and Captcha setup.
Submit form with email address.
Successfully submitted.
Check email, attempt to reply, only displays the email that is setup to send and not the email filled out from the form or submittee.

You’re absolutely right, some plugins were causing the issue, I wish I knew coding so I wouldn’t have to rely on so many plugins, lol…
