The subre_email_subscription_cancelled and subre_email_subscription_expired messages are for store management, but they don’t have a TO field in their settings. They only have CC and BCC fields, so you can set an ADDITIONAL email address, but these messages will always ALSO be sent to the administrator address set in WordPress. Take a look at the standard WooCommerce store management messages β by default, they’re sent to the WP administrator’s address in the settings, but you can change the recipient in their settings because there’s a TO field, which your aforementioned messages are missing.
I’m seriously starting to wonder if you’re doing this on purpose? You keep showing the wrong page where I’m telling you there’s a problem. Other users are reporting similar problems β I’ve pointed out the cause, and you stubbornly pretend you don’t understand.

Your video confirms what I wrote, but doesn’t show where I pointed out the problem. Yes, the order is being created. Yes, it’s visible in the SUBRE panel. BUT there’s no “subscriptions” column in the orders view (your video doesn’t have one either!), and the active subscription isn’t visible on the “my account > subscriptions” page (you didn’t show that page at all). And subscriptions in general don’t work. And this happens when HPOS is enabled. When it’s disabled, everything is fine.

The latest. This is a test analysis, as a friend asked for help and got the same result both on her site and on the test site.

Anyway, someone has reported a similar problem before. It’s not about editing a specific course page in Divi, but about using the Divi Theme Builder feature. And it doesn’t work.
