I’m having the same problem after the latest round of updates.
Not being a real programmer I have bodged a temporary fix which probably messes up gift cards, but since I don’t use them that’s OK with me.
I changed line 43 from:
return Mollie_API_Object_Method::GIFTCARD;
To:
return '';
