UPDATE:

Having deleted some of the offending pages and the menus that are linked to them, I’ve recreated some holding pages and menus; the page names are showing correctly now, so all is good, although this doesn’t help answer why the names were all to pot in the first instance!

If anyone could shed some light on possible reasons, I’d still be delighted to hear!
