I have since disabled the plugin on both sites, so it is not replicated in production anywhere.
Steps to replicate:
1. Enable plugin
2. Complete setup wizard
3. Add new Schema
4. Select Local Business
5. Enter information
6. Select placement on Homepage = True
7. Save
8. Homepage schema is present
9. Navigation to otehr pages outside of the homepage throw error

This happened on two sites, the only common plugin was they both use Advanced Custom Fields, but that shouldn’t interrupt.
Do I need to try and configure on a page type rather than homepage? My goal is to only put this Local Business schema on the homepage for my sites.
