Hi,
There is no conditional shortcode selection in contact form 7. This plugin only offer only date and time selection. In pro version you can disable previous date prior to today. Like in your case delivery date must be greater than today. In pro version you can disable previous date so that client can only select date from today. or you can disable today also.
