We’re having almost the exact same problem with our Postie also. A week ago it stopped working cold. No settings anywhere were touched. I just realized yesterday that emails from our app were not posting!
We too are using Divi theme.
We too are seeing the emails apparently processed (they get moved to the Trash folder in the email account) but nothing gets posted.
It was a week ago and maybe it coincided with updating our Divi or Postit plugin.
Can you guys please share here what solution you find so we too can implement it?
