I have the same problem. If one clicks on the product thumbnail, then nothing happens. One has to click on the product name link that appears with the thumbnail. Not so intuitive…. maybe a bug?

It seems that uploading products via the import facility solves this problem, so is a workaround.
Create the category first via
Dahsboard > Products > Categories
thereafter import a .csv file with the products into an this category
Dashboard > Settings > Store > Import Tab
Then the products do get “registered” / “counted” under categories.
