Adding that bit of CSS seems to have done the trick, thanks for that!
The site isn’t really ready yet, so it still looks kinda rough, but I set it live for the purposes of support. Testing it now it isn’t unusable on mobile after all but the buttons are still very widely spaced so it does look messy.

Only a couple of products are variable.
The orders do tend to stay at “payment pending” even once the payment has come in through paypal. Before, they would show as “processing” once payment was received.
When I set them to “completed” the stock level does not update.
