I did some more testing and the additional “From:” seems to be limited to Gravity Forms. I tried Contact Form 7 and Ninja Forms and both had the correct From header.
However, although the header was correct, I get an Unverified Signature error on both of the additional plugins I tested. The test email with S/MIME is still working with a verified signature.
