I’ve just tried to send the email to a Gmail account as well, the outcome was exactly the same.
The from field on the email is supposed to display [field2] of my form.
The form name is “Παραγγελία” which means “order”.

Thanks for the update.
The problem is partially fixed. While in the actual body of the email the greek characters are being displayed correctly in the from field (where the first & last name are supposed to be displayed) they are still encoded with html values.
