Yet another update: when I upload new images to the gallery all the images (both old and just uploaded) show up in the media gallery.
When I go back to media -> library or try to insert images into a post/page or select a featured image no images display.
Update: I uploaded a few new images and all my images are displaying again in the gallery. Still weird, but at least that solves the missing images problem.
