There is a drop down on the right(Displaying Content) when you open your gallery. In there you can select pagination. Looks like there are not any options to change the number of images per page or anything like that but I just started using this plugin yesterday so don’t quote me on that.

I have just started using UXGallery but I noticed that the description box accepts HTML so you could do something like this to make your description bold<p><b>Taco is a 12 year old, hand, 15.1 hand, ranch-broke, Sorrel & White Tobiano, Paint horse gelding. </b></p>
You would have to do this for each description. If you need to make all descriptions bold you should look into making a custom class for them and styling it with CSS.
