Thank you for the response the issue has been solved now.
We had to removed the woocommerce from the database and the website then reinstall Woocommerce and it has seemed to fix it.

Yeah everything is up to date and there is no caching plugin on the site.
Yeah we have tried to default theme and had no luck.
The website adds 1 item to basket then after any other items causes an empty cart
Not sure what else it could be
