you have enabled “Assistant selection” only from back-end, so the system will automatically select those assistant that can perform the services the user have selected.
From your video I see that your assistant can perform only specific services.

if you enable “force guest check-out” then the custom fields set as “User profile” will not be displayed.
To use “user profile” fields you need to disable “force guest check-out”.

to prevent this I suggest to enable the “change order” option.
It’s not a bug but when the booking process starts from date&time step the system will show you all the available dates regardless of the assistants availability that is calculated only after the date & time selection.
