Sorry Caleb, I don’t have solution or time to check for this sub-menu opening.
We had same issue, but we fixed this by modifying jQuery code from
wp-content/plugins/easy-sidebar-menu-widget/assets/js/jquery.easy-sidebar-menu-widget.min.js
