I have exactly done what you suggested (and indeed I have already done this with the Members plugin). However, if in the Editing tab in the Editor option from the Role Capabilities dropdown menu, I uncheck the edit option in the pages row (as you advised), then in the Quick Edit menus in the All Pages screen, the Author dropdown field is completely disappeared. Then all pages’ Authors are just reset to the admin (so myself) and I cannot assign other users as authors.Did this approach really work for you?
But, another problem is that if you have editing permissions granted and editing-others-pages denied to the editor role, then still you can assign only one single user as author of a page. So this editor user then can edit the page she is authoring, but another editor user cannot. I did not find define( ‘DISALLOW_FILE_EDIT’, true ); or something similar in any of the files.
Fortunately, WordPress provided an update to version 6.2.1 today. I installed the update and now the site editor works.
