You can use WordPress default theme , but best practice is always create Child theme and override its template . so in future whenever new update comes it will not affect your original theme .

to change To email address , go to adminside Contact -> Contact Forms -> your contact form name Click on Edit link and then its detail page will open in that go to Mail section at there change To email.
