If you have access to the database, you an acctually edit the fields that the mail-function uses.
In the “wp-option”-table the corresponding fields start with booking_email in the “option-name”-column. Just edit the option-value with whatever you need the e-mail to say.
It’s by any means not the best way to solve the problem but it’ll save you the reinstall of the plugin and loose all your bookings.
