Ok, got it thanks. I hadn’t created any categories yet and couldn’t type them in on the fly.
All that being said, I spent more time with the Canvas theme and found a setting in there for the template I was using that changed the content from exerpt (stripped) to content (unstripped).
Have since removed this plugin from that site.
